Wildflower Salad

The wildflowers that we collected in Rambouillet forest

The last time we were in Rambouillet my fiancé bought a small cookbook for me called, La Cuisine des Petits Chemins“, a book of recipes using wild flowers and other foliage found in the local forest. We went back to Rambouillet yesterday. This time we collected dandelions and other wild, edible flowers as we walked along a trail full of butterflies.

Dandelions act as a natural diuretic, assisting the body to shed excess fluid retention. Their name in French is pissenlit meaning, “pee on the bed”, I think I prefer the imagery that dandelion provokes in my mind, the Lion from the Wizard of Oz, he was a dandy and a lion, et voila!

We have a wonderful outdoor market near out house every Sunday. So today I bought some organic avocado, sprouts and romanesco to make this salad with the dandelions we brought home with us yesterday (make sure to put them in water, they wilt fast!).  Garnish with a bit of mild olive oil, fresh lemon juice and sea salt and add a bit of green apple if you like. The dandelion has a unique but mild flavour and you don’t get more “organic” than picking your own flowers from the middle of a forest!
